FAST FAKEAWAYS – Thai Yellow Curry with Jasmine Rice

Being a chef, I do mostly make everything we eat from scratch, but Thai curry paste from scratch involves buying lots of specialist ingredients. Our organic sachets contain no nasty preservatives, have authentic, top quality ingredients and make life simple and delicious!

This is one of our most-made fakeaways at home. Thai yellow curry paste is absolutely delicious, quite mild so the kids love it, but absolutely packed with complex flavour. Simply simmer a sachet with a can of coconut milk, add some cooked veg and you’re good to hunker down with a steaming, vibrant bowl of Thai food. This quick method is so flexible, chuck whatever veg you have handy into the roasting dish with some firm tofu – cubed butternut squash, sweet potato, carrots, aubergine, peppers etc… and simmer any tender green veg with the sauce – asparagus, kale, spinach… I love it with fragrant jasmine rice or quickly boiled wide, flat rice noodles.

Ingredients (serves 2)

  • 1 sachet of Thai Yellow Curry Paste
  • 1 tin of coconut milk
  • 1 pack of firm tofu
  • 2 carrots
  • 1 purple sweet potato
  • 1 tbsp vegetable oil
  • 1 big pinch of salt
  • 2 handfuls of kale
  • Jasmine rice or Thai rice noodles to serve
  • optional toppings – fresh coriander, lime wedges, chopped scallions, toasted cashews or sesame seeds, salted peanuts, sliced red chilli…

Method

Preheat your oven to 200C. Cube up your tofu, carrots and sweet potato and add them to a roasting dish. Of course you should feel free to use alternative vegetables.

Drizzle the veg with a little oil and season simply with a big pinch of salt. Toss the vegetables with the oil and salt and put them in the hot oven to roast for around 20 minutes or until tender.

Meanwhile make the curry sauce. It’s as easy as emptying the contents of the sachet into a pot with the contents of the can of coconut milk. Turn the heat on and allow the ingredients to mingle and simmer.

Then put on your jasmine rice. For two people I measure out an espresso mug of rice into a fine sieve then give the rice a good rinse. Then tip the rinsed rice into a small pot with 2 scant espresso mugs of water. Put the lid on the pot and put it on the hob on the highest setting. As soon as the rice comes to the boil, turn the heat to the lowest setting and leave it to absorb all the water. Do not stir the rice or remove the lid. This whole process should take about 15 minutes for white jasmine rice – brown rice takes considerably longer.

While the rice is cooking and the veg is roasting, turn your attention back to the pot of curry sauce. You can add tender, fast cooking greens to the pot just before the veg is ready to come out of the oven. I used kale this time. Strip the leaves from the tough stems and slice the stems very thinly. Add them to the pot of simmering sauce to soften well before you add the leaves. Add the leaves 3 minutes before you take the veg out of the oven.

Once the roasted vegetables and tofu are cooked through, take them out of the oven and scrape them into the pot of curry sauce and kale and stir to combine. Taste for seasoning. You may wish to add some lime juice or salt.

Serve the curry and rice in bowl and top with chopped coriander, spring onions, chilli and lime wedges. Additionally add toasted cashews or salted peanuts for some welcome crunch. Enjoy!

Courgette Risotto

To me a risotto should elevate a single vegetable. It should celebrate it. Add too many ingredients to your risotto and the flavours will mingle and become indistinguishable in the long simmer. Courgettes are incredibly versatile. Fantastic cooked down low and slow into a silky mush, griddled and seared, battered and deep fried, raw… So for interest and texture in this dish I’ve cut each courgette differently. One diced and simmered with the onions into a meltingly soft sauce, one sliced into rounds for texture and body in the risotto and the last one peeled into raw ribbons to go on top. Serve with a swirl of pesto (try my salad bag pesto here), a drizzle of good olive oil and some toasted hazelnuts. Heaven.

Ingredients (serves 4)

  • 1 onion
  • 1 tbsp butter and 1 tbsp olive oil
  • 2 sticks of celery
  • 4 cloves of garlic
  • 3 courgettes
  • 1 mug of risotto rice (or however much you like to serve 4)
  • 1 lemon
  • 1 stock cube
  • salt and pepper to taste
  • 3 tbsp (or more to taste) pesto
  • extra virgin olive oil to serve
  • toasted, chopped hazelnuts to serve

Method

Dice the onion and put it in a wide pan with the butter and oil over a medium high heat. Add a pinch of salt and sauté and soften for around 6 minutes.

Dice the celery sticks, garlic and one of the courgettes and add them to the pan to soften too. Cook, stirring often until soft and golden. Around 10 minutes.

Rinse and add the risotto rice to the pan with the zest and juice of the lemon (or a glass of white wine). Crumble in the stock cube and add a generous grind of black pepper. Stir well to coat the rice in the seasoning then add a mug of warm water.

Slice the second courgette into rounds and add it to the pan. Simmer and stir until all the water has been absorbed then add another mug of water. Keep simmering and stirring.

Meanwhile use a vegetable peeler to slice as many ribbons from the third courgette. Chop up the middle bit and add it to the pan. Keep simmering and stirring and add another mug of water. Taste and adjust the seasoning with more salt, pepper or lemon once the rice started to swell up and become softer.

Once the risotto is cooked (the rice should be soft and creamy but still with a little bite) turn off the heat. Stir through a few tbsp of pesto, pile on the raw courgette ribbons, drizzle everything with extra virgin olive oil and scatter over the toasted hazelnuts.

Take the pan to the table and serve with the jar of pesto handy to add extra swirls through the bowls of anyone who wishes for more.

Jerk Jackfruit with Red Beans & Rice

I always keep a kitchen cupboard stocked with tins of beans, tomatoes, coconut milk and jackfruit. Having a repertoire of store-cupboard suppers is very useful when you are subscribed to a veg box delivery. Depending on what’s going on each week, sometimes I have a bit of fresh fruit and veg leftover when the new, weekly box arrives and sometimes I need to make a store-cupboard supper or two before it arrives and that’s totally fine! Especially with the range of brilliant, organic groceries at Green Earth Organics. What a luxury to be able to eat fresh, organic vegetables most days, and organic store-cupboard ingredients on other days!

Here’s one of our current store-cupboard staples, a spicy, Jamaican inspired jerk stew with the most delicious coconutty red beans and rice!

Ingredients for the rice

Method

Put the rice, coconut milk and drained tin of beans into a small pot. Add the onion wedge and whole cloves and a pinch of salt. Add a mug of water then stir briefly to combine.

Bring the rice pot to the boil with the lid on, then immediately as it comes to the boil, turn the heat down to the lowest setting, leave the lid on, do not stir, and allow the rice to gently simmer and absorb all the liquid in the pot.

For white rice this only takes about 15-20 minutes, brown rice takes double that time. So if you are using brown rice, get it assembled and on to boil first, if you are using white rice, get the stew on first then the rice.

Ingredients for the stew

  • 1 tbsp of vegetable oil
  • the rest of that onion – diced
  • 4 sticks of celery – diced
  • 1 red pepper – diced (optional – can switch with seasonal veg)
  • 4 carrots – diced
  • jerk seasoning – see below to make your own (about 4 tbsp)
  • scotch bonnet chilli (optional)
  • 2 tins of young jackfruit (drained)
  • 1 tin of chopped tomatoes
  • salt & pepper to taste

Method

Sauté the onion, celery, pepper and carrot in a large pot with the vegetable oil. Once it starts to soften and colour, add the jerk seasoning and stir to coat the vegetables and toast the spices.

Add the jackfruit pieces, break them up as you add them to the pot, then season with salt and pepper.

Add the tin of chopped tomatoes, 2/3rds fill the tin with water and swirl that out into the pot too. If you like it spicy, you can drop in a whole scotch bonnet chilli or two at this stage too.

Give the stew a stir and pop the lid on and allow it to simmer while the rice cooks. Remove the lid and give it a stir every now and then to make sure it’s not sticking on the bottom.

Serve with wilted dark leafy greens or with wedges of roast squash like I have done in the video above.

Ingredients for jerk seasoning – mix together in a jar

  • 2 tsp ground cinnamon
  • 2 tsp ground black pepper
  • 6 tsp dried thyme
  • 4 tsp ground allspice (or mixed spice if you can’t find allspice)
  • 6 tsp ground cayenne pepper
  • 2 tsp ground nutmeg
  • 2 tsp ground ginger
  • 4 tsp garlic powder
  • 6 tsp smoked paprika
