4 ingredient – Energy Oat Bars – Vegan

These are so quick and easy to make and bake. Once baked and sliced you can make up a snack plate with the fruit from your weekly box! If you make these as often as I do you’ll soon memorise the recipe like me.

We love snacks like this because they have few nutritious ingredients, taste great, they are a quick bake, they are cheaper than shop bought snacks, we can make them with organic ingredients and they can be fully plant based if thats what you like.

I served mine up with apple and orange slices. It makes a super nutritious snack, great for kids too.

Ingredients: makes 12 servings

  • 200g oats
  • 100g smooth runny peanut butter (or any nut or seed butter)
  • 3 ripe bananas, mashed
  • 70g chocolate chips (or chopped chocolate)

Method:

Step 1: Preheat the oven 180ºc. Line an 8in square tin with parchment paper.

Step 2: Mash the bananas and add them to a mixing bowl along with the peanut butter and oats. Mix well and transfer into the baking tray. Scatter the chocolate chips evenly on top.

Step 3: Bake for about 20 minutes, until golden brown. leave to cool then slice into 12 squares.

Double Chocolate – No Bake – Brownies – VEGAN

Homemade chocolate treats that are made with lots of good organic stuff.. .yes please! These are rich and decadent and give a great boost of energy. I ordered some lovely organic medjool dates and walnuts and organic dark chocolate to make these. Perfect with that mid morning coffee.

They are a no bake treat so no ovens needed just a bit of time to set in the fridge. Grab all you need for these tasty snacks in our online shop.

Ingredients: makes 16 squares

-150g – 1 cup medjool dates, stone removed
– 60g – 1/3 cup walnuts, chopped
– 40g- 1/3 cup ground almonds
– 40g – 1/3 cup cocoa powder
– 40g – 1/2 cup oats
– 110g – 1/3 cup smooth peanut butter
– 2-4 tbsp boiled water
– 150g Dark chocolate bar plus 1 tablespoon coconut oil

**Taste the mix -feel free to add a dash of maple syrup or honey if it tastes bitter.

Method:

Step 1: Line a 8inch square tin with parchment paper.

Step 2: If using medjool dates, remove the stone and add them straight to the blender. If using regular dried dates, soak in boiling water for 5 minutes, then discard the water.

Step 3: Add the dates, ground almonds, cocoa powder, oats and peanut butter to a blender. Blend until smooth. Add a tablespoon or 2 of boiled water if the mix is dry. Then add the walnuts and pulse. Check the texture with a spoon, if it sticks its ready, if its dry add a bit more water.

Step 4: Pour the brownie mix into the tin and press down with the back of a spoon. Try smooth it as best you can. Melt the chocolate and coconut oil in the microwave in short bursts (or in a pot over simmering water), then pour over the base and transfer to the fridge to set for an hour.

Take from the fridge and slice into squares.

This will keep in the fridge for 1 week or in the freezer for 3 months.

Chocolate Nut Slice- No Bake

Summer snacking has become a new event in our house. But rather than picking up the individual plastic wrapped treats from the shops we are making the effort to make our own. The results are very tasty!

We did a bit of a cupboard raid for these and added some peanut butter and pecans. You can add any chopped nuts you fancy to the chocolate topping. Raisins would work here too!

Ingredients: makes 8 big slices

  • 2 cup oats
  • ½ cup peanut butter
  • 2 tablespoons cocoa powder
  • 4 tablespoons honey or maple syrup
  • 2-4 tablespoons water (depending on how dry the mix is)
  • 150g dark chocolate
  • 1 heaped tablespoon coconut oil
  • 2 tablespoons pecans, chopped (or what every nuts you fancy)

Method:

Step 1: Line a small tray or lunch box with parchment paper 15cm x 20cm approx.

Step 2: Add the oats, cocoa powder, peanut butter and honey to a blender. Blend until combined. Check the consistency of the mix, if its dry add a small spoon of water and blend again. And add more water if it’s still dry. Then mix should stick together when it’s ready, test a piece with your fingers.

Step 3: Tip the mix onto the tray and smooth it into the corners using a second piece of parchment paper.

Step 4: Melt the chocolate and coconut oil in the microwave or in a heat proof bowl over a pot of simmering water. When melted add in the chopped pecans. Pour this over the base. Then put it in the fridge to set completely, at least 1 hour.

Slice into bars. Enjoy
